Instructions to make Masala rice:

  1. In a large pot add lot water,salt and washed rice, cook till 80% done, strain in a colander..
  2. Heat a nonstick kadai with butter and oil, spultter musterd seed, cumin seed, curry leaves, fennel seed..
  3. Add ginger garlic paste, split green chillies. Sautรฉ for few seconds..
  4. Add chopped onion and saute till soft..
  5. Add chopped tomatoes and cook till soften..
  6. Add chopped carrots,green peas and cook till becomes soft and tender..
  7. Add chopped capsicum and cook for few more seconds..
  8. Add all spices,salt and 1/4 cup water.cook until masala cooks well..
  9. Add cooked rice,mix well. Cover for 10 minutes and cook on simmer flame..
  10. Add chopped coriander leaves, serve with choice of pickle..
