  1. Take 500 gm of carrot.
  2. Get 1/2 cup of mustard oil.

  6. Prepare 2 tbsp of mustard seed.
  7. Get 1 tbsp of fennel seed.

  9. Use 1 tsp of turmeric powder.
  10. Take 1 tbsp of cumin seed.
  11. You need 1 tsp of Carom seed.
  12. Provide 1 tsp of fenugreek seed.
  13. You need 10 of grm ginger chopped.
  14. You need 8-10 cloves of garlic.
  15. Provide To taste of Salt.

Instructions to make Carrot pickle:

  1. First wash carrot,chilli then soaked after that peel chopped green chilli,ginger,garlic cloves and carrot in long thin piece.
  2. Heat the kadai add dry roast mustard seed, fenugreek seed, cumin seed, fennel seed, carom seed then take a Mixi jaar add dry roast masala.
  3. Then make coarse powder form (not fine one).
  4. Then Heat the same kadai add oil when oil is hot put asafoietida, carrot, green chilli ginger and garlic piece.
  5. Fry these for 2-3 min in medium flame after that add turmeric powder and salt mix it well.
  6. Then cook for 30 sec then add red chilli powder, all dry roast powder mix it well then turn off gas.
  7. Then cover with lid Wait till for completely cool down.
  8. After that add lemon juice.
  9. Now carrot pickle is ready to eat but you will get pickle actually taste after 2-3 days when carrot absorb all the spices.
  10. Then pour it in a container jaar.
  11. Then keep the container in direct sunlight for 2-3 days to increase the taste of carrot pickle.
  12. Now you can enjoy this pickle.
