The ingredients needed to cook Sambhar:
- Provide 3/4 cup of tur/arhar(split pigeon peas).
- Prepare of Vegetables.
- Take 1/2 cup of lauki (bottle gourd)cubed.
- You need 1/4 cup of pumpkin cubed.
- Prepare 1 of carrot cut into small pieces.
- You need 1/4 cup of brinjal cubed.
- You need 7-8 of beans chopped.
- Provide 1 tbsp of coconut chopped.
- Provide 1 of tomato chopped.
- Provide 1 tbsp of tomato puree.
- Provide 1.5 tsp of sambhar powder.
- Use 1 pinch of hing/asafoetida.
- Prepare 2 of dry red chillies.
- Get 1/4 tsp of turmeric powder.
- You need 1 tsp of red chilli powder.
- You need 1 tbsp of curry leaves.
- Get 1 tbsp of coriander chopped.
- Get 2 tbsp of oil.
- Get 1/2 tsp of mustard seeds.
- You need 5-6 of methi (fenugreek)seeds.
- Provide 1/4 tsp of fennel seeds.
- Get To taste of salt.
- Use 1 pinch of sugar or jaggery.
- Provide 1 tbsp of soaked imli (tamarind)pulp.
- Provide 5-6 cup of water.
Steps to make Sambhar:
- Soak tamarind in 1/4 th cup warm water.Soak dal with warm water for 15 minutes.Cube brinjal, lauki and pumpkin into 1 inch pieces.Cut carrots into small pieces.Chop beans.Chop onion and tomato.Boil all vegetables except brinjal with red chillies,chopped coconut and onion with 1/2 tsp salt.Add tamarind pulp.Pressure cook dal with turmeric and little salt upto 2 whistles.Open lid after 5 minutes..
- Add sambar masala to the dal.Heat oil and lightly fry brinjal till soft.Add vegetables and tomato puree to the boiled dal and boil.Heat oil and sprinkle mustard,fennel and methi seeds.When they crackle,sprinkle 1 pinch hing and curry leaves and fry.Add this to the dal and boil.Adjust salt and pinch of sugar.Serve hot with rice,idli,vada,dosa or uttappam..
