- You need 2 of large red onions, chopped.

- In a pan, heat the chicken stock and place the roasted squash in the pan, reduce heat to low and let it cook for 5mins..
- You can use a hand held blender or a normal blender to blend the mixture. Place in a sieve and use a spoon to make your work easier..
- Place the mixture into a pot and let it boil for 10mins. Serve in a bowl. Add some cream or plain yogurt and garnish with parsley. You can serve with toast or croutons. Enjoy.
